The mixture consists of over a dozen spices, in different proportions.  In Arabic, it means: "head of the shop" and implies a mixture of the best spices the seller has to offer. 


Commonly used ingredients include cardamom, cumin, clove, cinnamon, nutmeg, mace, allspice, dry ginger, chili peppers, coriander seed, peppercorn, sweet and hot paprika, fenugreek, and dry turmeric. 


It can be used in many savoury dishes and rubbed on meat & fish, or stirred into couscous, pasta, and rice. 


To be honest, we put it on almost every hot dish!
